Summer Strawberry&Peach Crumble

I finally got around to making another post! Thanks for your patience!
This is one of my favorite crumble recipes.

Filling:
about 15 medium sized strawberries
(fresh, not frozen)
1 peach
1 TBSP of cornstarch
1 TBSP white sugar
a pinch of salt

Topping:
2 TBSP of cold butter
1/8 C + 3 TBSP flour
1/4 C oatmeal (split into 2 portions)
2 TBSP packed brown sugar
Preheat your oven to 350 degrees Fahrenheit.

For the filling, slice your strawberries into fourths or in half depending on size.
Then cut your peach into little squares as well.
Next add in the dry ingredients and stir until most of the powder is incorporated.
Set aside to work on the topping.
For the topping add the butter (cut into little cubes), 1/8 C of flour, 1/8 C of oatmeal, and the brown sugar to a swallow bowl. Using your hands, mix together until you get a dough like consistency.

Then add the remaining flour and crumble until you get a sand-like topping; mix in the rest of the oatmeal.

Divide the filling into two 16 oz ramekins and top with the crumb. You will most likely have extra crumb, you can freeze this in a bag and save it for another recipe, or discard it.

Bake in the oven for 18 to 25 minutes, or until crumb in golden brown. Enjoy!
